Menu Name Definition: Carnival - Carnival is a festive season which occurs immediately before Lent; the main events are usually during February. Carnival typically involves a public celebration or parade combining some elements of a circus, mask and public street party. People often dress up or masquerade during the celebrations, which mark an overturning of daily life.  Carnival celebrations, usually referred to as Mardi Gras, were first celebrated in the Gulf Coast area of the United States. The best-known, most elaborate, and most popular events are in New Orleans.

If it's the "Big Apple" then New Orleans is the "Big Easy," where everything is slower, simpler and easy-going.

Menu Name Definition: Neutral Ground - The grassy or cement strip in the middle of the road.  The terms "median" and/or "island" are NEVER used in New Orleans. Use of one of those foreign terms instead of "neutral ground" is a dead giveaway that you aren’t from around there, or anywhere close. Legend has it that the neutral ground got its name from early New Orleans when the French and Spanish could do business between sections of the city standing on the "neutral ground."

Menu Name Definition: Bayou -  The word was first used by the English in Louisiana and is thought to originate from the Choctaw word bayuk, which means "small stream."  The first settlements of Acadians in southern Louisiana were near Bayou Teche and other bayous, which led to a close association of the bayou with Cajun culture.  Bayou Country includes the Gulf Coast region generally stretching from Houston, Texas, to Mobile, Alabama, with its center in New Orleans, Louisiana.

Menu Name Definition: Vieux Carré - The French Quarter, also known as Vieux Carré, is the oldest and most famous neighborhood in the city of New Orleans. When New Orleans(La Nouvelle Orléans in French) was founded in 1718 by Jean-Baptiste Le Moyne de Bienville, the city was originally centered on the French Quarter, or the Vieux Carré ("Old Square" in French) as it was known then. While the area is still referredto as the Vieux Carré by some, it is more commonly known as the French Quartertoday, or simply "The Quarter."  The district as a whole is a National Historic Landmark, and contains numerous individual historic buildings.
